Sardinian casumarzu is a type of pecorino. You certainly need a strong stomach to enjoy it, because its major characteristic is that it contains little white maggots which are considered to be a delicacy. The maggots are added to a matured pecorino cheese through a little hole in the top, then a few drops of fresh milk are added as well. The cheese is left to develop at room temperature and, when it is ready, the maggots (tasting of pecorino) can be scooped out with bread.
