Fontina cheese is synonymous with the Aosta Valley in Piedmont. The tradition of its manufacture is very ancient and it has been produced since the twelfth century. The region is extremely proud of this product, which literally brings the fragrance of the pastures to the table. It is produced by a cooperative of Fontina-makers from 74 towns in the valley.
The cows used to produce the milk come from the Val d’Aosta area and they are very carefully controlled to make sure the cheese maintains a high standard. The milk from these herds has to be used immediately, at most 2 hours after being collected, which is why milk from cows high up in the Alps is transported to a central storage area in Aosta for distribution.
