Similar to caciotta, primo sale (meaning ‘first salt’) is a fresh cows’-milk cheese made in several regions in Italy, including Liguria and Savona. It has to be eaten when extremely fresh and just after it has been through the salting process. In Sicily and the south there is a similar fresh cheese also called primo sale, the only difference being that it is made with ewes’ milk.
