Not to be confused with the flower of the same name, the bergamot is a citrus fruit which looks like a small, slightly pear-shaped orange. The small tree is grown only in Calabria and Sicily, and produces a bitter fruit. The skin of the fruit is candied for use by the patisserie industry and its oils to scent and flavour tea and liqueurs, and in the blending of perfumes - indeed, it is the main constituent of eau-de-cologne.
