This Piedmontese biscuit gets its name from the fact that the two circles of shortcrust biscuit, sandwiched together with plain chocolate, look like a pair of lips. To make them: mix together 150 g (5 oz) finely ground almonds with 150 g (5 oz) 00 flour, 150 g (5 oz) caster sugar, 150 g (5 oz) soft butter, a little grated lemon, orange or lime zest and 3 egg yolks. Work the mixture until well combined, then form it into little balls and place on a buttered baking tray and bake in an oven preheated to 190°C/375°F/gas 5 until golden brown. Allow the biscuits to cool, then sandwich them together with a little melted chocolate.
