To make wafers you need a wafer iron. Wafers are made from a smooth dough called cialda or cialdone, made with 350 g (12 oz) plain flour, 1 egg and 2 egg yolks, 100 g (3½ oz) sugar, 60 g (2 oz) butter and a pinch of salt. Mix all the ingredients together until you have a fairly soft dough, adding a little water if the consistency is not loose enough. Heat the wafer irons until they are very hot, brush with a little oil or fat and put a tablespoon of the dough on one side of the iron, press the other side of the iron on top and bake on both sides for a few minutes. Open the iron and peel off the hot wafer. While it is still warm, shape it into a cone or leave it to cool flat, depending on how you want to use it. Fill with cream or ice cream and anything else you like, or eat on their own.
