This cake, made in the shape of a dove, is an Easter offering representing peace. Like panettone, it is now eaten all over Italy and sold abroad in specialist shops. It is quite different to panettone, in that it does not include raisins and has a higher proportion of eggs and butter and includes candied orange peel. It is covered in a sugar-and-almond icing and is eaten as a dessert, ideally with a glass of Moscato or any other sparkling dessert wine.
