This special bread roll is sold filled with a variety of ingredients, but most famously the local delicacy of fried spleen sold at Vucceria market in Palermo. The bread roll is made with a leavened dough of plain and semolina flour, yeast and water, sprinkled with sesame seeds. They are cut in half and filled with the spleen which has been boiled then thinly cut and fried, along with ciccioli (pork fat), in lard and spices. The whole thing is sprinkled with Pecorino cheese to make a wonderful and unusual snack.
