Like panettone is for the Milanese, pandolce is the centrepiece of the Christmas feast for the Genovese. It is a much smaller and heavier cake than panettone, as it contains so much candied fruit, raisins and nuts as well as special flavourings like orange water or aniseed. It takes quite a long time to bake, because of the amount of time it takes for the dough to rise.
