This term is used to describe a wide range of items made in Puglia, but perhaps nowadays here is mostly used to refer to bread. Pane Pugliese is a very large round bread, about 40 cm (16 inches) in diameter and 12-14 cm (5-6 inches) high, with a thick and dark crust. It is made using plain wheat flour with the addition of hard durum wheat flour, resulting in a very dense, wholesome and extremely flavoursome bread, able to last for several days.
