This very fashionable white wine from the Veneto is made from the Prosecco grape growing in the area of Conegliano or Valdobbiadene in the province of Treviso. There are two types of white produced with this grape. The slightly sparkling tipo frizzante is obtained by natural fermentation and can be dry or semi-sweet. The straw-yellow spumante, especially the Superiore di Cartizze, is also dry or amabile (sweet) but pleasantly fruity. Cartizze is usually decanted into a tall glass jar to get rid of some of the sparkle! One of the most popular drinks made with this wine is the Venetian speciality, the Bellini cocktail, in which fresh peach juice is added to the wine to make a delicious summer drink.
