From Canavese in the province of Turin and Vercelli at the estuary of the Aosta Valley in Piedmont comes this exquisite white wine, of which several versions are made. Erbaluce Caluso is dry, with a straw yellow colour. Its very fine bouquet makes it suitable for all fish and delicate dishes. The Caluso Passito is also made from Erbaluce grapes, but they are put to dry after harvesting to increase the natural sugar content. This produces a wine which is dark amber in colour, with a 13.5% or 14% alcohol content, making it a wonderful aperitif wine. A third type, Caluso Passito Liquoroso, is fortified with added alcohol, making it the perfect dessert wine.
