For the Emilians, Lambrusco is so dense it has to be eaten and drunk at the same time. This is the real Lambrusco, locally produced in Emilia-Romagna from the Lambrusco di Sorbara and Lambrusco Salamino grapes which grow in the province of Modena. Although only 11% alcohol, the intensity of this wine makes it very dense and extremely dark red, almost violet. It is naturally sparkling, which makes it foamy, and it has a very pleasant bouquet and tastes of fruit. It is most suitable for the various pork and duck dishes of the area and generally with the fairly rich local food. There are a few other varieties of Lambrusco made with slightly different grapes but with the same characteristics; Lambrusco Grasparossa, Lambrusco Reggiano and Lambrusco Salamino di S. Croce are the best known. This is a wine that does not travel too well, so it is better to drink it locally.
