Some attribute the use of the word santo here to the fact that this wine is used sometimes for celebration of the Mass, others because the wine originated from Xantos in Greece. This rich aromatic Tuscan wine is a delicious dessert wine, traditionally used to dip Cantucci biscuits after a meal. It is produced from Malvasia and Trebbiano grapes which, after harvesting, are put on straw mats to dry to increase the sugar content before being turned into wine. Depending upon the fermentation, the ageing process in wooden casks for at least 3 years produces a wine that may be sweet, semi-sweet or dry. Vin Santo is also used as a flavouring in pastries and creams.
