This traditional Piedmontese aperitif is made from Barolo wine with the addition of the rind of China, an Oriental evergreen plant (Cinchona succirubra), as well as many other herbs and spices, and is used as a flavouring in other wines and liqueurs. Vino Chinato has a dark red brown colour and is drunk either cold on ice or as punch.
