APPEARANCE: This cabbage grows like a flat, round plate or saucer, only a few inches tall but 5 to 14 inches in diameter. The leafstalks have the familiar ivory color of Chinese white cabbage, baak choi.

QUALITY: Smaller plants with many young leaves clustered tightly at the center are the best.

GENERAL COMMENTS: Although this is simply a form of ordinary Chinese white cabbage, baak choi, it is one of the most ingenious plant varieties ever discovered or devised, Growing so close to the ground, it can easily be protected from killing frost, and hence survive for harvesting well after everything else has shriveled up and died.
