APPEARANCE: A multitude of mustard cabbages reach Chinese markets. Three characteristics can be used to identify them all: an overall pale green color; thin-textured leaves with irregular edges; and stemless form (with all leaves attached at the base of the stem). Two forms are illustrated here:
