Soybean Sprouts

APPEARANCE: Nga choi are bean sprouts; dai means big; dau are beans. Thus, not coincidentally, shoppers identify these sprouts by the big bean at one end. They may be further distinguished from mung bean sprouts by their general robustness (4 to 5 inches long) and, in Hong Kong, by an organized method of display. Where mung sprouts are invariably jumbled in a heap, soy sprouts are often neatly tied in bunches or arranged in a circle, heads to the outside and root-tails to the inside.
