Bell Pepper

APPEARANCE: Distinguish mild bell peppers from their fiery cousins by size and shape. These measure 3 to 4 inches in height and diameter.

QUALITY: Select firm, unblemished fruits. Check stem end for signs of rot. Those slightly red are beginning to ripen and should have more vitamin C and sweetness.

COMMENTS: The bell pepper is a derivative of the chili and a second-cousin of the tomato and eggplant. All enjoy international popularity because the plants grow quickly, fruit prolifically, and respond readily to horticultural manipulation. They therefore reach markets and supermarkets virtually year-round.
