Kudzu

APPEARANCE: A combination of characteristics distinguishes this root from others. First, it is unusually large: commonly 10 to 15 inches but possibly greater than 2 feet in length. It is heavy. Its skin is coarse and scarred. Its shape is elongated, tapered at both ends, and irregularly convoluted in the middle. If it has been sliced, look for narrow, dark concentric rings — like tree rings — in the dry, white flesh.

QUALITY: Apply criteria as for other roots, selecting firm, sound individuals. Dirt and/ or mold on any exposed surface is usually truly superficial, so can be cut off, leaving the rest of the root fit for consumption.
