Melt 1 oz. butter in a large saucepan. And 1 finely chopped onion and stir in the cup of rice. Fry over moderate heat, stirring well until rice is golden brown. Add 2 cups of boiling water and 1 teaspoon salt. Bring to boil, stir once, cover tightly and simmer for 15 minutes.
