Go into a typical Danish fishmonger, and the exquisite smells will make your mouth water. Or visit a Danish butcher, where there will be a gorgeous and clean aroma of smoked delicatessen meats. It makes for a great business as you always end up buying many more things than on your shopping list… And all these yummies are, in fact, pretty easy to make at home, too.
The Danes are also major cheese farmers. A large proportion of my food when I was growing up comprised cheese on bread with a thick layer of butter and a glass of milk. It is rare now for people outside of Denmark to give their child such a start to the day. We still enjoy enormously many different dairy products, and have also grown to love more easily digestible alternatives to traditional Danish cheeses, such as feta. In Danish supermarkets, in the cheese section, there will always be a few varieties of feta, in little pots of brine or oil, some seasoned with herbs, and I find this to be a wonderful substitute to a normal cow’s milk cheese.
