For me it is so important to nourish your heart, mind, body and soul. I am very sensitive to different foods and feel instantaneously the effects of what I eat and how I look after myself. I believe that we are what we eat! Having grown up with a typical, rich Danish diet, my adult years have taught me to be more sensitive to how I feel with each meal I have.
Working as a model and then as a TV presenter, needing high levels of energy for long days, while maintaining glowing skin and a feeling of wellbeing in very demanding times, were the inspiration behind me wanting to learn more about how the foods we eat affect how we feel.
