I eat often during the day, always beginning with breakfast quite soon after I wake up. I am as happy with smoked pheasant and scrambled eggs as I am with a cinnamon bun, and of course lots of milky coffee.
I really enjoy salads for lunch, for example the smoked mackerel salad, or my father’s delicious chicken and celery salad. Soups are also fantastic in my opinion. If you want something satisfying, whip up a batch of beetroot (beet) soup with baked feta or the Jerusalem artichoke and truffle soup. These are also perfect as a starter for dinner, or served in an enormous bowl as a main course with freshly baked rye bread and ‘tooth butter’, which we Danes adore.
