From Küchenmeisterei (Nuremberg, 1485; recipe from 1490 edition): To make a Krapffen dough. Heat as much honey in wine as you want and also take a shallow bowl and whisk the wine with white flour to make a batter. crack an orange egg yolk in another bowl and also a little saffron and mix very well into the prepared honey wine and add it to the whisked batter mix it well and sprinkle flour into the bowl until you have made a firm dough. then prepare a clean towel and pull the dough over it with a wooden rolling pin to make it thin. and cut shapes large or small as you want the Krapffen, depending on the filling that suits you. or you can make the dough with yeast or beer or hops water; all of these you must let rise and afterward knead; make them with lukewarm water or with a cooked honey wine to suit your own taste.
