As well as sweetening the ice cream, sugars also lower the freezing point of the mixture, which helps keep it softer when frozen. If you taste the ice cream base before it is frozen, it will seem very sweet, but once it comes out of your freezer, it will taste good. This is because our taste buds do not function as well when food is very cold.
