Filling Whoopie Pies

You can use a simple buttercream or a more complicated marshmallow-type filling, depending on the recipe you choose to follow. Feel free to mix and match the recipes for pies and fillings, to create your own personal favourites.
  1. Match the cakes up for shape and size. Use a teaspoon to place a spoonful of filling on to the flat side of one cake, then spread it with a metal spatula. For a more professional-looking finish, pipe the filling on to the cake using a piping (pastry) bag fitted with a star-shaped nozzle.
  2. Gently press the flat side of the other cake on to the filling to make a sandwich, being careful not to squash the filling out of the edges. Repeat with the remaining cakes and filling.
