You can use a simple buttercream or a more complicated marshmallow-type filling, depending on the recipe you choose to follow. Feel free to mix and match the recipes for pies and fillings, to create your own personal favourites.
- Match the cakes up for shape and size. Use a teaspoon to place a spoonful of filling on to the flat side of one cake, then spread it with a metal spatula. For a more professional-looking finish, pipe the filling on to the cake using a piping (pastry) bag fitted with a star-shaped nozzle.
- Gently press the flat side of the other cake on to the filling to make a sandwich, being careful not to squash the filling out of the edges. Repeat with the remaining cakes and filling.
