Along with kaiseki and cha kaiseki, honzen is a style of traditional, formal cooking in which a succession of beautiful and intricate dishes are served. It uses the principle of ichiju sansai (soup and three other dishes). It is quite an austere style which is not as common as kaiseki cuisine these days. It is usually only seen at weddings or funerals.
