Kyoto cuisine. For many years Kyoto was the capital of Japan and, as such, it has a lot of tradition and a strong cultural heritage. It was also the capital of Buddhism which means that both cha kaiseki (tea ceremony cuisine) and shojin ryori (Buddhist vegetarian cuisine) flourished there. It is famous for pickles, vegetables such as red carrots (kintoki) and dried confectionery items (higashi).
