Pickles. A fundamental aspect of Japanese cuisine, there are many different varieties ranging from salt-pickled vegetables and fruits to vinegar or bran-pickled. There are also many different methods. Some are long pickled for preservation while others are pickled very briefly, purely for flavour. The most basic meal in Japan will consist of rice, pickles and soup.
