Dim Sum

  • About
When chopping or dicing filling ingredients for dim sum, do it using a cleaver. The ingredients will not be too fine and will retain their moisture, in turn giving the cooked dim sum a juicy, springy bite. Machine-chopping may result in an uneven texture with mushy parts.
