Although they come in small morsels, dim sum encompasses all that the Cantonese call yun zap, yun mei, meaning “natural taste and flavour”. To achieve this, the freshness of the ingredients is paramount. Meats and seafood have to be market-fresh, not chilled overnight, or the texture and taste will be compromised.
