Shanghai noodles are a variety of fresh noodles that are thicker and chewier than other noodles. It’s usually packaged in a clear plastic bag and labeled as thick noodles, plain thick noodles, or Shanghai noodles. They are available at Asian supermarkets or Chinese delis. If you can’t find this variety of noodle, you can use any noodle that is broader than regular egg noodles. If you like, you can even use udon.
