Clarified butter: butter consists of fat, milk solids and water. Clarified butter, also called ghee, is made by slowly melting the butter (in a microwave oven if you wish), allowing the solids and water to settle to the bottom of the container and then pouring the clear fat into a separate container and discarding the solids. Clarified butter is available commercially.
