Italian parsley: one of the two types of parsley. It is also known as flat-leafed or continental parsley. The other type of parsley is the curly-leafed. I prefer to use the flat-leafed Italian parsley on most occasions because it has a stronger flavour, but the curly-leafed variety can always be substituted.
