Liaison: a preparation used for thickening sauces. It can be made from flour and water but usually applies to a mixture of eggs and cream that is added and whisked into a sauce at boiling point. The sauce is not reheated as it may separate if the egg is too cooked. Proportions are 3 eggs to 1 cup (250 mL/8 fl oz) light (single) cream.
