Strong bread: most commercial breads are weak. They are soft and the dry crumbs become almost like flour very easily. Strong bread is usually a crusty style made from strong, high gluten flour. The term refers to a good French, Italian, Greek or Spanish/Portuguese bread, which forms large uneven crumbs when rubbed.
