Rhizomes almost every dish begins with a bumbu spice paste, usually with ginger, turmeric and sometimes their piney cousin galangal at their base. Clean and slice excess and freeze in bags for future bumbus, or make up a large batch of Master bumbu. You must also try some of the drinks recipes, which make good use of these fresh spices.
