Lemongrass outside of Asia, lemongrass tends to be sold in small amounts so you’ll be more likely to be buying more than seeking uses for leftovers. Half the recipes in this book use lemongrass, either pounded into the spice paste or, more usually, bruised then knotted and thrown into the pot. Throw in with abandon as most savoury dishes will happily marry with the fragrant lemony scent, and lots of sweet ones too.
