Also known as aromatic ginger or resurrection lily (and I am told it sometimes mistakenly goes by lesser galangal). This knobby rhizome is much smaller than ginger and galangal, with dark, reddish-brown skin and a pale, soft centre. It is a beloved ingredient in Bali and Java for its strong, camphor-like flavour. Peel and use sparingly. Omit if you can’t get it as there is no real substitute.
