A crucial ingredient used in abundance to add depth to cooked spice pastes and raspy spice when used raw. Indonesian cloves tend to be milder, sweeter and fresher than those we can buy in the West, so they are used generously. Using old or harsh-tasting garlic, especially raw, will off balance a dish. Look for heads that are small and firm with no sprouts.
