One of the most striking flowers in the world, torch ginger is also a delight in the kitchen. Growing straight up from the ground like flaming torches, the buds of unfurled waxy pink petals contain layers of flavour: spicy, floral and gingery. They can be finely sliced and added to salads and sambals. If you are lucky enough to get one, try in the Balinese lemongrass sambal.
