An Indonesian native, one of the Old World’s most revered spices was once only grown on two small islands in the Moluccas. This dried flowerbud of a tropical tree has a warm pungent flavour that punctuates savoury rather than sweet dishes in Indonesia. Its most common use is in kretek cigarettes that are said to cool the throat after a hot meal. They crackle when smoked, giving off a tobacco-clove aroma that is a signature scent of the country.
