Papaya flowers

An exotic ingredient that you are not likely to come across outside of the tropics, but I had to include them here as I have learnt to love these bitter little buds with their white petals curled inside. One of the best meals I have ever had was cured smoked pork from Timor, charred and sticky from the barbecue, served with a bitter green and papaya flower stir-fry.
