Dried shrimps

Small peeled or unpeeled shrimp from the South China Sea are sundried and sold in small plastic packages. Soak in warm water to soften, then use as a garnish or to give a briny undertone to dishes. Look for shrimps that are small in size without a lurid pink colour (too much preservative).
