Coconut oil, made from the coconut flesh, is the traditional cooking oil of Indonesia. This can be refined to be flavourless with a high smoking point (better for cooking) or extracted for virgin coconut oil with a nutty flavour. Where I have specified simply oil in a recipe, you can choose whichever neutral cooking oil is available. Groundnut/peanut oil is a good choice, but you could also go for vegetable oil, rapeseed oil or sunflower oil. Olive oil has the wrong taste for Asian food.
