The glossy, dark-green lime leaves (from the Keffir lime, which has a more knobbly skin than the familiar lime) give dishes a lovely lemony-lime flavour. You can find them, packed in plastic bags, in some specialist oriental shops โ€“ and it is well worth the effort looking for them โ€“ otherwise you can usually find dried lime leaves.
