Noodles, Cellophane

Very fine, transparent noodles, these are sometimes called ‘glass’ noodles or ‘bean thread vermicelli’ as they are made from ground mung beans. Available dried from Chinese grocers and some supermarkets, they need to be soaked for 5 minutes in warm water, then drained before use.
