Oyster Sauce

Dark brown in colour, this thick sauce is made from a concentrate of oysters cooked with soy sauce, wheat flour, cornflour and rice. It has a rich flavour that is not fishy, despite its name. Often part of recipes for Chinese cookery, it can also be used as a condiment.
