A strongly-flavoured seasoning oil which, if you’re buying the real thing, is made from roasted sesame seeds. Many European sesame oils are made from unroasted seeds and are a pale yellow in colour as well as less flavoursome. So it is worth tracking down authentic brands from specialist stores. Sesame oil is used for its fragrance and for the flavour it adds to foods, rather than as a cooking oil as it burns easily. It keeps well.
